Apart from the raw materials quality the yeast strain significantly affects the quality and the character of the final beer. Especially microbiological purity, consistent yeast quality and yeast vitality are essential parameters for quality management.

The Doemens collection of microorganisms comprises pure-cultures of more than 90 yeast varieties and further culture organisms such as lactic acid bacteria for biological acidification. We are also glad to offer you a storage possibility for your strain as a “Backup” and supply you with freshly grown cultures of your yeast in regular intervals.

The cultures will be shipped approx. 14 days after receipt of order since each culture is freshly propagated. Furthermore, there will also be microbiological quality check to make sure that the cultures are free from micro organisms which are harmful to beer and to guarantee impeccable quality.

Doemens Dry Yeasts
Dry yeast offers a chance for small breweries not having their own yeast propagation resp. for breweries nor producing regularly, to obtain yeast easy and independently.
Due to the good storage abilities, it is also possible to bridge supply shortages of the usual yeast supply or to quickly solve quality problems with their own yeast.
Doemens has a cooperation with Lallemand, Montreal Canda. Out of this cooperation the following yeast strains of the Doemens Collection of Micro Organisms and Lallemand yeast collection are available in 500 g aluminium packs:
Strain 308 (Lallemand Diamond Lager)
Strain 308 is a bottom fermenting flocculating yeast with good sedimentation properties and a high attenuation degree. With it´s good fermentation properties and the well balanced aroma spectrum it is a popular and frequently used strain. During fermentation strain 308 produces SO2 at high levels leading to a good flavour stability and a decreased beer aging.

Wheat beer yeast Strain 433 (dry) (Lallemand Munich)
The Strain 433 is a top fermenting yeast for the production of typical traditional Bavarian-style wheat beers with a well balanced fruity flavour.
