Yeast Bank / Collection of Micro Organisms

The yeast strain significantly affects the quality and the character of the beer along with the composition of raw materials for beer production. Especially microbiological purity, consistent yeast quality and yeast vitality are essential parameters for quality assurance for brewers.

Whether it is pub breweries or major industrial breweries – our experience from years of tried and tested cooperation are available to our customers of our yeast strain collection of pure culture yeasts strains, whether it is for

  • the development of new beer varieties
  • the brewing of special beers
  • the basis for consistent and good yeast quality in the yeast propagation plant of breweries
  • or for the maintenance and care of breweries' yeast strains as a "backup copy".

The collection of strains comprises pure cultures of more than 80 yeast varieties and other culture organisms such as lactic acid bacteria for biological acidification.


Among others, our customers may chose from following varieties of pure-culture strains:

Bottom fermenting yeast Flocculating yeast, non-flocculating yeast, pressure fermentation yeast
Top fermenting yeast Wheat beer yeast, pressure fermentation yeast, yeast for Altbier, Koelsch yeast, ale yeast, stout yeast
Lactic acid bacteria cultures Lactobacillus delbrückii, Lactobacillus amylovorus
more cultures upon request

We can also deliver additional special yeasts (ale yeast, stout yeast, belgian wheat beer yeast...) on request!

The cultures will be shipped approx. 14 days after receipt of order since each culture is freshly propagated. Furthermore, there will also be microbiological quality check to make sure that the cultures are free from micro organisms which are harmful to beer and to guarantee impeccable quality.

Doemens Dry Yeasts

Dry yeast offers a chance for small breweries not having their own yeast propagation resp. for breweries nor producing regularly, to obtain yeast easy and independently.

 

 

Due to the good storage abilities, it is also possible to bridge supply shortages of the usual yeast supply or to quickly solve quality problems with their own yeast.

The following yeast strains of the Doemens Collection of Micro Organisms are now also available in 500 g aluminium packs:

Strain 308

Strain 308 is a bottom fermenting flocculating yeast with good sedimentation but also a high attenuation degree. The good properties and the well balanced aroma spectrum make it to a popular and frequently strain.

Wheat beer yeast Strain 333 (dry)

 

The Doemens wheat beer yeast strain 333 (dry) is top fermenting yeast and produces a mainly fruity ester yeast aroma and a typical traditional Bavarian-style wheat beer flavo
