Doemens takes the Radeberger Export Group to school

The Radeberger Group not only has a solid footing in the German beverage market, but also in over 50 countries worldwide. Brands such as Jever, DAB, Clausthaler, Schöfferhofer, Braufactum or Berliner Kindl are valued internationally and are enjoying steady demand. In a bid to strengthen the connection to German beer culture on the one hand and to Radeberger's beer portfolio and its corporate philosophy and values on the other, export managers Kamil Krakes and Walter von der Heyden put together a three-day seminar with Doemens in July.

Selected representatives from various Spanish-speaking countries were invited to Radeberg for a three-day seminar, which included excursions. The 14 participants from Spain, Puerto Rico, Uruguay, Chile, Argentina and the Dominican Republic enjoyed a varied professional development program including historical beer development, beer styles and food pairings. The seminar was led by Doemens partner Cilene Saorin, who praised the sensory expertise and commitment of her charges. In addition to a tour of the Radeberger brewery and Braufactum, they also visited Dresden and Berlin.

According to Walter von der Heyden, the participants were more than satisfied with the program, which provided important perspectives regarding Germany's longstanding beer culture: "If Cilene Saorin needed another day to deliver her program, none of the participants would have objected. For me, the seminar exceeded my expectations. Right from the start, Cilene was been able to inspire the participants, despite the fact that the group was quite diverse, ranging from sales and management to section heads. I'm convinced the participants will not soon forget this experience".

First Argentinien Beer Sommelier Course

Argentina is known to be a wine country. However, industry insiders know that excellent beers are also produced. Michael Zepf, head of the Doemens Savour Academy and the two Doemens partners in Brazil, Cilene Saorin and Carlo Bressiani from ESCM (Escola Superior de Cerveja e Malte), offer beer sommelier courses right in Buenos Aires.

The April premiere was a huge success and the course, which goes into September, is fully booked with 24 participants. Course materials and methods are largely based on the German beer sommelier program and supplemented with country-specific from the South and Central American brewing industry. The course is usually scheduled over weekends and consists of five modules, which are conducted by Cilene Saorin and local lecturers. The ESCM is responsible for administration.

Third international Doemens Water Sommelier course successfully completed!

Our mineral water sommelier courses, under the motto: "WATER IS NOT JUST WATER!", is enjoying increasing international popularity. In 2011, the first German-language water sommelier course was offered, followed by English-language courses in 2016.

In July 2018, the third international water sommelier course was conducted in English under the direction of Dr. Ing. Peter Schropp and Nicola Buchner. The course, which was sold out several months in advance, took place with water enthusiasts from Great Britain, Russia, Singapore, Denmark, Mexico, Slovenia, Croatia, Hong Kong, Taiwan, India, Portugal and France. Due to comprehensive sensory exercises, the number of participants for this popular professional development program is limited to 16.

At the graduation ceremony, all participants were delighted to receive their official Water Sommelier certificates. The Best Participant award went to Mašenjka Katić of Zagreb, Croatia. Like all participants, learning about mineral water sensory assessment technology was the highlight of the course for this student, as the following statement demonstrates:

„Working with natural mineral waters for a long time, with focus in their nutritional benefits, I was very curious about the Water Sommelier Course. Interestingly, this comprehensive program is presented very clearly, in a way that it could be understood by broad audience and different professions. The most valuable and surprising part for me was the sensory training. It is absolutely amazing to learn not just how to recognize the differences in various types of natural mineral waters, but to be able to describe them. Beer sommelier education in Korea

In Korea,enthusiasm for beer has been sparked in recent years. This is especiallynoticeable in gastronomy in general and especially in the growing pub scene.Jihee Lee, a partner and local representative for  Doemens, has been training beer sommeliers andhelping to nurture this new excitement surrounding the delicious beverage.Since 2015, training has been offered in Seoul, educating and certifying 140new beer sommeliers thus far. What is striking about the courses, which arealways fully booked, is the great enthusiasm of the participants and the highproportion of women.

Dr. Michael Zepf,head of the Doemens Savour Academy, conducts the final examinations on site. Inthe practical part, participants have to correctly allocate five Korean lagerbeers, recognize off-flavors and present a beer to the class. In thetheoretical examination, beer knowledge is queried as part of a multiple-choicetest. After passing the exam, the newly-trained beer sommeliers receive theircertificates, which are now displayed in many catering establishments. The nameDoemens has therefore developed into a strong brand in beer sommelier training.

Each course endswith a fun ceremony, and many alumni join to celebrate their new graduates.This great cohesion among beer sommeliers provides excellent networking opportunitythat has now led to the founding of a Beer Sommelier Association, which hasalready been joined by more than 100 Korean beer sommeliers. The associationwas founded by the sommelier Edward Park, who, during the most recentgraduation ceremony, inducted Jihee Lee and Dr. Michael Zepf as honorarymembers of the association.

Mineral Water Ambassador Course for Hijos de Rivera

Doemens water sommelier programs are becoming increasingly popular abroad. Since 2016, Spanish water sommeliers have come to Munich to participate in the first international English-language Water Sommelier courses. Due to this increased exposure, more and more mineral springs rely on tailor-made, in-house trainings.

Thus, for the first time in Spain, a three-day seminar took place at Hijos de Rivera. The well-known Galician beverage company, which is very successful in the beer, wine, cider and mineral water sector, wants to further strengthen its visibility in the mineral water sector and has therefore trained its employees to become "Mineral Water Ambassadors".

Dr. Peter Schropp, initiator and head of water sommelier training at Doemens Academy, introduced the 16 participants to the sensory subtleties of mineral water and, of course, featured in-house brands, such as Cabreiroá, Magma de Cabreiroá, Agua de Cuevas and Agua Fontarel. In addition to sensory technology, lectures on the advantages of mineral water compared to tap water, methods used to position mineral water in gastronomy as well as current and future trends in the Spanish mineral water market played a major role.

With this knowledge, the participants are now well prepared to tackle the new project "Il Mondo del Agua" and to further strengthen their own brands in the domestic beverage market.

Water mineralization consulting

Water’s not just water! This is certainly true in the context of Doemens‘ water sommelier courses, and is an equally important guideline for water mineralization consulting.

„Purified Water“ and „Mineralized Water“ play a big role in the worldwide „bottled water“ market. While we in Europe and especially in Germany enjoy the great fortune of being supplied with an overwhelming variety of natural mineral water, in other parts of the world water treated via reverse osmosis, which is then correspondingly mineralized, is playing an increasingly important role. More and more people are aware that mineralization has positive nutritional as well as sensory implications, which means that increasingly more tailor-made mineralization is in demand.

Doemens has been meeting this higher level of demand through its unique approach to designing and delivering our water sommelier courses. We deliberately teach a variety of mineralization methodologies in order to raise awareness among our many seminar participants about the sensory characteristics of various combinations of mineral salts.

The experience of our graduates is increasingly in demand for consulting activities, as knowledge of sensory expression of different minerals used by the water industry is still growing. For example, Doemens has already provided valuable assistance in the development of various mineral combinations intended for the individual enrichment of low mineralized water in private households.

In addition, six different kinds of mineralized water have been developed for the Ukrainian market, which, with deliberately selected mineralization, will support specific nutritional needs and thus contribute to daily mineral intake requirements. Consultations in the Arab world on the development of "Mineralized Water" with defined sensory characteristics have also been initiated. Growing worldwide demand for bottled water that offers specific ingredients will, in turn, further increase Doemens' service and advisory activities in this area.

Siebel Institute CEO visits Doemens Akademie

Christian vonder Heide is well known in the national and international brewing scene. Thetrained brewer & maltster (who trained at the Augustiner brewery in Munich)worked for several international brewing companies and suppliers. He alsoserved as EBC President. Heide has been CEO of the Siebel Institute in Chicagosince the beginning of 2018. The institute is a long-standing Doemens partner.In 2001, a strategic alliance for brewing / brewing technology training wasbegun under the brand "World Brewing Academy" (WBA) and is still aglobally recognized and successful brewers’ training program.

As a native ofMunich, his connection to Doemens Academy is also strengthened by involvementin several joint projects over the years. "Christian von der Heide is theideal person to fill this post at Siebel Institute. He knows Doemens Academy,is multilingual, well acquainted with the international brewing industry, has alarge network and can identify well with both corporate cultures",according to Michael Zepf, responsible for WBA training programs at Doemens.

In order tofurther strengthen WBA and its strategic orientation, a first meeting with theDoemens delegation was held in April. Werner Gloßner (CEO), Dr. Ing. MichaelZepf and Dr. Gerrit Blümelhuber (business unit manager for consulting, seminarsand services). At the forefront of the meeting were reflections on jointefforts of Siebel Institute and Doemens Academy under the WBA brand goingforward, for example through expansion of alumni activities. In the future, WBAalumni will automatically become part of the Doemensian alumni network in orderto give the WBA even better access to Doemens Academy activities worldwide. Thenext meeting will take place in June.

Ambassador of Beer for Super Bock

Portugal is a country of connoisseurs and a land of culinary arts. The other country on the Iberian peninsula is known not only for its good wines, but more and more for high-quality (craft) beers. The local population clearly enjoys the new variety, but tourists also flock to these beverages, especially in the major cities of Lisbon and Porto. The most famous Portuguese beer next to Sagres is Super Bock, which was first brewed in 1927 and is still made by the Super Bock Group.

However, the increasing enthusiasm for beer also requires suitably trained and sensitized personnel from the brewing side. At the beginning of 2017, in a cooperative effort between the Super Bock Group and Dr. Ing. Michael Zepf, head of Doemens’ Savour Academy, a program to train their staff from various departments (administration, sales, marketing, technology) to become "Ambassadors of Beer" and to convey a basic understanding of beer in all its facets, was developed.

The course is offered in two languages: In addition to Portuguese, under Cilene Saorin, representative of Doemens on the Iberian Peninsula, it can also be taken in English under Dr. med. Michael Zepf. Since Summer, 2017, eight courses have already been successfully completed and have been met with positive response throughout the field.

Course content varies, ranging from the sharing of beer knowledge (raw materials, brewhouse, fermentation and storage), to the development of a beer-related language, detecting off-flavors, describing various beer styles, identifying country-specific conditions (including market situation, pricing policy, consumer behavior) as well as beer & food pairings.

Theoretical knowledge is deepened through practical experience - be it through extensive sensory training, presenting selected beers to groups of colleagues or tracking the brewing process in the company's own specialty brewery. Not just the staff benefits from the training: The leaders of the brewery group (CEO, CMO, CFO) were educated as Ambassadors of Beer as well - an indication of Doemens' training competency status in Portugal's largest brewery group.

Premiere: France Bière Challenge

The development of regional brands and the enjoyment of locally-brewed beer is becoming more commonplace in France. To celebrate the local brewing culture and to honor the best beers in the country, the first France Bière Challenge took place in Paris on March 16th, 2018.

Numerous French breweries have responded to the appeal and have submitted a total of 420 beers. The beers were tasted and evaluated by 50 international judges from eleven nations, all of whom are specialists in the field of sensory analysis. Marlene Speck from Doemens Savour Academy was on duty and unleashed her sensory expertise in support of the challenge.The tastings took place in the hotel school Sainte-Thérèse in Paris, where students demonstrated perfect beer service and demonstrated an impressive culinary presentation. In one of the side events, participants visited the breweries Brasserie De L'Etre and the Paname Brewing Company, which serve as fine examples of the flourishing culture of French microbreweries.

As part of the France Bière Challenge event, planning for the French-language beer sommelier training program continued. The first course will take place after May, 2018 in Paris.

Cooperative agreement sealed between Doemens and Mihalkovo Natural Springs

During Dr. Peter Schropp’s visit to Bulgaria, at the invitation of the marketing agency Sol  Communications,  Inc. and Mihalkovo Natural Springs, a long-term agreement   with Doemens Academy was arranged.Mihalkovo natural springs – located in the  Bulgarian Rhodope Mountains – has a unique mineral water spring that is second to none. The natural carbonated mineral water is characterized by a special  mineralization, in particular the high sodium, calcium, magnesium and silicon content  makes it special. An ideal mineral water for endurance athletes. In addition, a still spring water with balanced mineralization is bottled for restaurants and caterers as a suita-ble companion for wine and food.

As part of the agreement, a multi-day seminar is planned for the entire sales team in  the first quarter of 2018 at the newly built logistics location in Plovdiv. In addition,  Doemens will also consult on technical issues in the future. Discussions and interviews with editors of various gourmet magazines were also on the agenda during the visit.  Doemens’ water sommelier training program was of great interest to the media. The  numerous  interviews which were published give reason to hope that the first certified Bulgarian water sommelier is just waiting in the wings

Doemens in Blumenau, Brazil

In early March, Feira Brasileira da Cerveja, a brewing technology trade fair, opened its doors in the southern Brazilian city of Blumenau to domestic and South American beer industry participants and became a member of the Beviale Family for the first time this year. 81 exhibitors presented their ideas and solutions for the production of beer and beer specialties on 2,100 square meters to around 5,400 visitors. A beer festival was also celebrated in two of the halls, attracting many visitors.

International suppliers, including Doemens Academy (represented by the head of Doemens' Savour Academy, Dr. Michael Zepf), presenting themselves in the Beviale Family Pavilion, were glad to participate. Dr. Zepf represented the interests of the World Brewing Academy (WBA), a successful joint venture of Doemens Academy and the Siebel Institute of Chicago, USA, in worldwide professional brewing technology training, both campus and web -based.

Parallel to the Feira Brasileira da Cerveja, Brazil's most successful beer competition took place for the fifth time in a pleasant and professional setting with the renowned Brazilian Beer Competition. Again, Dr. Michael Zepf, as a member of an international jury, was involved when it came to identifying the best beers out of more than 2800 beers submitted from more than 300 Brazilian breweries. The jury had over 140 beer styles to evaluate, the three categories with the most submissions were IPA, South German Style Hefeweizen and American Style Pale Ale.

WBA delegates meet at Doemens

Twice a year, the WBA delegation meets to map out strategies: in late January / early February in Munich at Doemens Academy and in September at Chicago's Siebel Institute. The principle aims include setting the direction of the association and developing the World Brewing Academy (WBA) brand. The WBA has been a successful joint venture between Doemens Academy and the Siebel Institute, part of the Canadian Lallemand Group, since 2001.

On January 31, Doemens CEO Dr. Werner Gloßner and the WBA's Doemens representatives, Dr. Michael Zepf and Michael Eder, greeted guests from the USA and Canada: Antoine Chagnon, Brent Jordan, Richard Dubé and Roberto Blanc (all of Lallemand), as well as John Hannafan, Educational Director of the WBA-Siebel, and the newly-appointed Siebel President Christian von der Heide. The WBA delegation re-affirmed their successful partnership. Doemens thanks its guests for the kind visit and the constructive discussions and looks forward to implementating the decisions made as the basis for continued success of the (international) WBA program.

Seminar and brewery excursion for the Russian EFES Group

Several different breweries in the Russian EFES Group sent their staff in two waves to  Doemens Academy just before Christmas to participate in our three-day seminar, which included an excursion to local German breweries. An excursion to well-known locations  within the brewing industry led the group, among other spots, to Hopsteiner, to the  brewery Schneider in Kelheim and to Austria’s only abbey brewery in Schlägl. The crowning finale of the Germany and Austria tour was an extensive 5-course beer-laced  meal in the Biergasthaus Schiffner with beer sommelier world champion Karl Schiffner. We look forward to hosting the Russian EFES Group again this year

WBA: Brewing in practise!

An important part of the WBA master training is to internalize the content by putting theories to practice. Master course module 7, "Advanced applied brewing techniques", will take place in its entirety at the Doemens Academy facilities. Students will get to experience brewing hands-on using different types of equipment to give breadth and depth to their theoretical knowledge. In addition to brewing at Doemens own small-scale (5 hl) brewing facility, the Lehr- und Versuchsbrauerei, students will also be given access to the  Riegele Braumanufaktur in Augsburg and to the Bierkulturhaus in Obertrum, Austria, as shown in these impressive photographs.

Doemens 2020: New construction status report

As someone who has previously either supervised the construction of a private home or guided companies through new construction projects, one has toget used to the fact that building with the direct involvement of a state institution is something altogether different. Direct involvement means that, cause Doemens needs and wants government funding for its education and training programs, strict requirements for all tendering procedures must be met alongside adhering to tight rules regarding space allocation, room sizesand much more.

In addition to managing building plans, the fundraising project also requires our careful attention each day. Important decisions needed to be taken with guidance from members of the newlyformedassociation “Doemens 2020 Friends and Sponsors”.

The last set of notarised contracts was signed last February, making Doemens the official owner of the property on Lohenstraße in Gräfelfing, and only then could the procurement regulation for architecturalservices takeeffect and the planning team be selected. These are very closely-prescribed procedures and the planning team finally began their work in July 2017.

In the meantime, the Doemens team was busy designing the use of the available space. Ultimately, the classrooms, technical rooms that hold the malting, brewing, bottling, food technology facilities as well as the training laboratories must meet all of the associated construction and utilization requirements and these must all be developed to officialpresentation specifications before the actual site can be developed.

After incorporating the various internal and external requirements and running these through a feedback loop, a final blueprint was presented in late October. We at Doemens are enthusiastic about it and the Board was more than pleased to give their consent. The experts were called upon to initiate the next stages of planning for the new construction.

In November, the draft was presented in a municipal council meeting. Here, too, Doemens received all of the necessary approvals, which were the foundation for preparing the project-related construction and development plan. Parallel to all of these activities, time-consuming meetings were held to pore over the many forms, technical descriptions and calculations requiring the approvalof the government agencies underUpper Bavaria’s administrative jurisdiction.

2017 is over and much has been achieved. Yet, there is still much that needs doing! What’s next? In 2018, we will move forward with planning and developing the technical facility with the assistance of mechanical engineers, who will guide us through the approval process while keeping close contact with our partner agencies. The objective is, by the end of 2018, to ensure that Doemens has its funding in place – freeof default and conflict – so that construction plans can be published and building permits obtained.

Parallel to these activities, we will also continue our fundraising project so that Doemens 2020 can be purpose-built to fully support the kind of training and professional development opportunties our community demands. Then we can finally announce the tender and look forward to the groundbreaking ceremony followed by the first excavating machines that will begin work on the Doemens property sometime in 2019.

Craft Beer Italy - a great event thanks to Doemens’ support

Craft Beer Italy, a two-day B2B fair about craft beer and its production, had its debut from the 22nd to the 23rd of November in Milan. 54 well-known exhibitors from 16 countries, who represented the complete process chain of craft beer manufacturers as well as 670 visitors were registered by the organizer, the NürnbergMesse Italia.

Accompanying the trade fair was a lecture series in two blocks (sessions and workshops) organized by Doemens Academy and the VLB Berlin. Representatives of Döhler, Pentair or Weyermann, for example, presented the audience with a variety of up-to-the-minute topics. From Doemens' side Stefan Grauvogl and Dr. Gerrit Blümelhuber weighed in with a total of six lectures, contributing to the high quality of this event.

From the 27th to the 28th of March, 2019, the second Craft Beer Italy will again be held in Milan - with the competent support of Doemens Academy

Second international Water Sommelier course completed!

2011 marked the start of the first German-language water sommelier course worldwide - held at Doemens. In addition, modular courses and mineral water celebration days have been developed in recent years, significantly expanding our training program spectrum.

In November 2017, the second international English-language Water Sommelier course was launched at Doemens Academy, under the direction of Dr. Peter Schropp and Nicola Buchner. The popular course (due to comprehensive sensory analysis procedures, the number of participants is limited) was offered to water enthusiasts from Great Britain, USA, Honolulu, Singapore, Taiwan, Turkey, Romania, Germany and Hong Kong.

In contrast to the German-language courses, with participants coming from the three traditional core target groups gastronomy, beverage trade and natural springs, the new international groups are much more professionally diverse. Internationally renowned gourmet ambassadors (wine, tea and olive oil sommeliers), are joined by trainees from international culinary institutes, quality assurance directors from renowned mineral water brands and lawyers who see opportunities in the water sector.

Doemens' motto for its water sommelier program: "WATER IS NOT JUST WATER!" has made quite a splash and is enjoying increasing popularity worldwide. We congratulate all of our graduates and look forward to the next international training programs that will focus on food group number one!

WBA European Brewing Study Tour, Fall 2017

The WBA degree program this Fall concluded with an intensive, two-week excursion throughout Germany, Austria and the Czech Republic. After touring the traditional Bavarian breweries Gutmann, Bischofshof and Schönram, participants came into close contact with the renowned Czech beer tradition at Pilsner Urquell, Budweiser and Chodovar.

In the Biergasthaus Schiffner in Austria, the group launched into the remarkable world of food pairings with beer over a delicious, 5-course dinner; The Freistadt, Hofstetten, Eggenberg and Stiegl breweries hosted our WBA trainees, giving them guided tours and introducing them to Austrian specialty brews.

The excursion included study tours to the facilities of raw materials providers and supplier manufacturers such as Weyermann, Ziemann Holvrieka, GEA, Kaspar Schulz and Krones. The fully modernized facilities as well as their global significance quite obviously impressed our participants. Guided tours of the German breweries Faust, Tucher and Schneider Weisse included further, professionally-run tastings of specialty brews.

Doemens at Global Bottled Water Congress in Barcelona

Zenith’s Global Bottled Water Congress covered a range of key themes for the global bottled water industry and provided excellent networking opportunities for industry leaders, suppliers, customers and analysts to gain strategic insight for essential business planning. Delegates heared from top international and regional manufacturers as well as from smaller industry players and entrepreneurs presenting their new products and concepts.

The Gala Dinner was opened with a Water Tasting, conducted by Dr. Peter Schropp from the Doemens Academy.  Following the Tasting with different famous mineral waters the winners of the Global Bottled Water Award were presented. Peter Schropp was one of the 6 judges, who assessed the entrants in 12 different categories covering innovation, taste, marketing, packaging and sustainability across all sectors of the packaged water industry.

Doemens’ Brazilian partner visits the Academy

South America has become an important focus for Doemens’ international activities, especially for our increasingly popular beer sommelier training programme, organized and managed by our valued repre-sentative in the region, Cilene Saorin. „Escola Superior de Cerveja e Malte“ (ESCM), which trains pro-spective brewers, has become a reliable partner in the effort to professionalize beer sommelier training on the continent. In September, the training facility’s Director, Carlo Bressiani (second from right), along with his colleagues João Marcos Eccel (left) und Douglas Fernando Nunes (right), visited Doemens and were hosted by Doemens Savor Academy staff member, Fabian Staudinger.

Our South Ameri-can guests were impressed with the scope and size of our training facility, especially with the bottling and packaging equipment, the well-stocked laboratory and the experimental brewery used to train our students to produce virtually any beer style. Bressiani reported that the expanding beer sommelier training programs in Brasil, Argentina and Uruguay have become quite popular, and that the agreement between Doemens and ESCM – which both parties signed at the Brasil Brau – has already begun to bear fruit.

Honored visitor from far-away Mexiko

Many internationally-known brewing and beverage industry players were attracted to the offerings of the drinktec exhibition as well as to the World Championship of Beer Sommeliers event in Munich. Fortunately, an especially competent Doemens partner, beer enthusiast and beer expert made the long trip – along with his wife – and also found time to tour the Doemens facilities in Munich-Gräfelfing.

Eduardo Villegas heads the Academia Mexicana de Eno-Gastronomía and is a leading light of the beer sommelier training program in Mexiko, which just began this year. Doemens considers itself fortunate to welcome such a well-versed, experienced partner located in far-away Central America. Villegas was clearly impressed by the Doemens facility, which encompasses apprenticeship-training, the Savour Academy, seminar programs, consulting and related services.

Big retirement party for Dr. Wolfgang Stempfl

„We’d like to say thank you“ was the message that rang loud and clear from 200 well-wishers gathered for Dr. Wolfgang Stempfl’s retirement party at drinktec at the ICM Munich. It was a rather emotional farewell, for the simple reason that Dr. Stempfl left his mark on Doemens and on the entire brewing and beverage industry. Georg Schneider, Doemens‘ President, put it concisely: „Your fingerprint is everywhere at Doemens as well as all over the national and international brewing and beverage landscape“.

Two Parisian artists created a portrait of the guest of honor, using beer bottle stamps. Dr. Stempfl gave a deeply moving speech in which he highlighted the most important milestones of his 30-year career, starting out as a laboratory director, then school principal until 2001, when he became Doemens‘ Directing Manager. Thank you, Dr. Wolfgang Stempfl, for these past 30 years at Doemens, characterized by your energy, inspirational guidance, competence and respect for others

drinktec 2017: Visitors crowd Doemens booth

As predicted, drinktec 2017 turned out to be a fabulous trade fair for all concerned. There was variety, innovation, inspiration and the very latest information to consider. More than 76,000 visitors (+12% vs 2013) from more than 170 nations brought drinktec the strongest presence in their 66 year history, surpassing all expectations. 67 percent of visitors came from outside Germany.

Visitors were welcomed in 15 halls by 1,749 exhibitors from 80 countries, another first. Yet again the exhibitors went all out to offer world premieres and first-class prototypes in attractive booths! This was especially apparent in Hall A2 at the newly designed Doemens exhibition booth, judging by the amount of positive feedback from everyone.

A whole host of visitors from all over the globe were welcomed with open arms, free-flowing Kellerpils and a selection of sour beers in the 60m2 booth. It was apparent that Doemens enjoys a strong reputation within the beverage community, has become an important training and professional development academy and is respected for its renowned Savour Academy, seminar programs and consultation services as well. The 5-day trade fair proved to be another major success for Doemens and aligned perfectly with drinktec’s 2017 motto: “Go with the flow!”

Stephan Hilbrandt is the new Beer Sommelier World Champion

The 5th World Championship of Beer Sommeliers took place in Munich. Stephan Hilbrandt from Germany prevailed against a field consisting of 69 participants from 15 countries to become the new World Champion of Beer Sommeliers. Vice Champion is Felix Schiffner from Austria and the third place was taken over by Rodrigo Sawamura. The competition, organized by Doemens Academy, took place today at Messegelände München in the run-up to this year’s drinktec convention.

The contenders demonstrated their vast knowledge as well as their considerable sensory skills in the earlier stages of the competition. In the semi-finals, a knockout round which featured the most persuasive competitors from the quarter finals, the remaining contenders were expected to present a beer style to a small audience. During the grand finale, each of the six finalists had to exhibit their full range of skills – including stage presence – before a high-ranking team of eight jurors in front of a live audience. They were given a beer style to work with that they had not previously prepared themselves to present.

Stephan Hilbrandt from Bonn persuaded the jurors and the audience with his considerable knowledge and impressive skills as well as his compelling beer presentation. He will hold the title for the next two years, during which time he will have the opportunity to spread the word about the culture of beer worldwide: “As new Beer Sommelier World Champion I will talk about the broad variety of beer, convince people and be the ambassador for beer worldwide.”

Dr. Wolfgang Stempfl says goodbye

He has accomplished great things not just for Doemens Academy, but also for the national and international brewing and beverage industry. His vision, his openness and his friendliness characterize this exceptional individual.We’re talking about Dr. Wolfgang Stempfl, a bedrock of Doemens for the past 30 Jahren, 16 of them as business manager. Stempfl turned Doemens Academy into a recognizable national and international brand in the brewing, beverage and food industry. Stempfl completed his last day on the job yesterday, but not to worry: he’s not going far. A big THANK YOU from the entire Doemens team for your accomplishments!

Doemens has its own booth at the BrasilBrau and Degusta Beer

Every two years, the South American brewing industry meets in Sao Paulo at the end of July - this was their 14th meeting - at BrasilBrau and Degusta Beer & Food. For the first time, Doemens had its own booth at this major international event.

Doemens Academy's wide range of educational programs focusses on the training of beer brewers and the various courses offered by the World Brewing Academy (WBA). For this reason, Dr. Michael Zepf, who is the head of these two divisions at Doemens, was on hand.

Visitor interest for the beer sommelier program as well as the brewing technology training at the WBA was overwhelming and far exceeded expectations. One explanation for this is surely the fact that Doemens is known to the general public because, for the past six years, we have been training beer sommeliers in Brazil, and many graduates of that program have become interested in other professions in the brewing industry, with many wishing to expand their knowledge into other areas of brewing technology. Some 2,000 beer sommeliers have received training in various Brazilian cities thus far.Apart from Brazil, this training program is also offered in Chile and, via an upgrade course, in Mexico as well, where the full program will soon be available. All this has been made possible through a partnership with Academia Mexican de Eno-Gastronomia (AMEG).

The BrasilBrau, as the principle meeting point of the South American brewing community, offered the perfect platform for Doemens to meet with their respective partners in the surrounding countries and to negotiate an extension of the partnership. For example, extended cooperation agreements were signed with both AMEG and Brazil's exclusive partner, the Escola Superior de Cerveja e Malte (ESCM). Together with ESCM, Doemens is now able to offer beer sommelier training in Argentina and Uruguay.

At the same time, Dr. Michael Zepf also took the opportunity to give two lectures (beer management and beer quality, including ideas about the production of alcohol-free beers) at the BrasilBrau Congress.

5. Ricardo Molina microbrewery seminar in Seville

In February, the microbrewery seminar of Ricardo Molina S.A.U., a Weyermann regional trade partner for Spain and Portugal, took place for the fifth time in Seville. The seminar - sponsored by Weyermann Malz, Doemens, Fermentis, TNS and Ashland - was fully booked and well received.

Brewers from various regions in Spain participated in the seminar and offered informative lectures on topics such as specialty malts, dry yeast, use of stabilizers for craft brewers, as well as hop products. Doemens Savor Academy head, Dr. Michael Zepf, gave a comprehensive lecture on "The Beer Sommelier as an Ambassador of Beer", highlighting the comprehensive training program offered by Doemens.

Next to the Ricardo Molina S.A.U. team, Xavier Galobart also played an important role at these proceedings. Besides being a Key Account Manager for Food Ingredients at Weyermann, he also organizes the training of beer sommers for Doemens in Spain and Portugal.

New Doemens building: Innovation with an eye on the future

With its recent property purchase, Doemens Academy has set the course for "Doemens 2020", an ambitious new project. With support from the municipality of Gräfelfing, the relevant notarial agreement was signed on December 16th, 2016. On January 31st, 2017, the municipal council unanimously approved the property sale. Investment costs for acquisition of the more than 5,000 m² site at Lohenstraße amount to approximately 3.3 million euros.

Doemens, a renowned and globally recognized training and education facility serving the brewing, beverage and food processing industries, has been experiencing significant growth in all areas for several years. In just four decades, the Academy has trained over 3,000 graduates - recognized worldwide as leaders in beverage production, the wholesale/retail trade as well as in pharmaceutical and environmental sectors  in Gräfelfing.

The success of this institution relies on closely connecting theory and practice in the transfer of knowledge. Highly qualified faculty prepare their students not only theoretically, but also provide practical, hands-on training in the institute’s extensive laboratory and pilot plant facilities.

Highly specific space requirements need to be met in order for Doemens to continue to meet increasing demand. This is no longer possible in the present facility on Stefanusstraße. "Doemens can only maintain a leading national and international role in the education and training of technical managers if the latest technical and laboratory equipment are made available. A larger space is thus indispensable", notes Georg Schneider, President of Doemens e.V.

As part of the "Doemens 2020" project, a comprehensive site search was carried out for a new, larger building near Munich. After a plot of land at the Lohenstraße changed owners at the beginning of 2016, the municipality of Gräfelfing secured the preemption right for Doemens. This step was the basis for the establishment of a new Doemens facility in Gräfelfing. In subsequent intensive negotiations, both the original buyer of the property, Stauch Wohnbau GmbH and the municipality of Gräfelfing were willing to compromise, which resulted in the draft of a satisfactory joint notarial agreement.

"Gräfelfing as a location was a priority during our property search because our students, our employees and our customers feel welcome here," according to Doemens president Georg Schneider. Mayor Ute Wüst agrees: "It is an honor to continue hosting an established, international institution such as Doemens in our community. As Gräfelfinger, we are very happy to do whatever we can to make Doemens, which has been in operation for over 100 years now, continue to feel at home here.

"This new location, with its expanded facilities, will ensure continued growth and success for Doemens. Apprenticeship opportunities, seminars, the "Savor Academy" (which provides training for prospective beer and water sommeliers), as well as the availability of faculty for consulting and various other services - used extensively to support the industries Doemens serves - can thus be intensified and developed to their full potential.

Doemens 2020: A closer look at the timetable
Further steps leading up to the move into the new building are tightly scheduled. In 2017, public tenders for architects and specialist planners will be issued. A preliminary plan is to be drawn up by the Fall, upon which the Municipality of Gräfelfing will prepare its property development plan. These steps will be tightly coordinated by Doemens and the municipality of Gräfelfing together.

In the second half of 2018, the development plan is to be published and a building permit for the new building will be issued. This will be the start for tenders and, ultimately, construction. In the event everything goes according to plan, a move into the new building at Lohenstraße, including state-of-the-art laboratory and pilot plant equipment, is realistically expected for the beginning of 2021.

AMEG/Doemens beer sommelier course in Mexico

The Academia Mexican de Eno-Gastronomia (AMEG), under the direction of Eduardo Villegas, has been offering a noteworthy professional development course for beer sommeliers for some time now. Two years ago Doemens, represented in South America by Cilene Saorin, developed a course module for the AMEG program in order to upgrade their offering to the diploma level. Since that time the upgraded course has had two successful seasons.

And there’s more: AMEG/Doemens has partnered and will be offering a full course program for prospective bier sommeliers, conceptualized to take full advantage of growing international awareness for this type of professional training. Doemens is proud to be a part of this cooperation with AMEG in Mexico to further raise the globally relevant profile for the bier sommelier idea.

Dr. Werner Gloßner is Doemens' new General Manager

Dr. Werner Gloßner officially assumed office as General Manager of Doemens e.V. and Doemens Academy, Inc. on October 4, 2016. He is looking forward to being a part of the Doemens family and to become more familiar with the vision and activities of this nationally and internationally recognised professional development and training institute. "Doemens has an excellent reputation in Germany as well as internationally, offering a wide spectrum of opportunities with a unique portfolio of compelling themes", said 50 year old Gloßner. Dr. Gloßner will join Dr. Wolfgang Stempfl as part of the leadership team until August, 2017 when Dr. Stempfl vacates his position.

After completing his brewing apprenticeship and graduating as a brewing and beverage technology engineer, he began his career with Roland Berger Business Consultants, moving on to positions at Schörghuber, Inc. and Paulaner. He then went on to spend the next 14 years as head of the Bavarian consortium of privately-held breweries („Private Brauereien Bayern“). "Doemens 2020" will become a major part of his new portfolio.

The First Diploma Beer Sommelier Course in Korea

In 2015, Doemens began offering a one-week basic course for training beer sommeliers in the Korean language. The launch was very successful. With three fully booked courses, it was now time to advance to the second step and offer the five-day upgrade course – the beer sommelier diploma – a step that would allow those who had taken the first course to complete the program. Within a short time, this course was also fully booked with 20 participants, because almost all of the 60 participants from the basic course were eager to continue their training.

A highlight of the advanced course is the so-called Beer Culinarium, in which the participants prepare their choice of food to pair with the beers selected for the course. With its many and varied ingredients, spices and unusual methods of preparation, Korean cuisine is perfect for designing pairings with beer. Not surprisingly, everyone in the course did their best to outperform the others, giving rise to a tremendous food pairing session, revealing the undeniably adept epicurean talents of the participants.
